Here’s a delicious, high-protein, nutrient-dense muffin recipe using Hemp Farm Protein Powder. These muffins are perfect for a quick breakfast or post-workout snack!

Ingredients

  • Ingredients (Makes 12 muffins)
  • 1 cup almond flour
  • ½ cup Hemp Farm Protein Powder
  • ½ cup rolled oats
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon (optional)
  • ¼ tsp salt
  • 2 large eggs
  • ½ cup Greek yogurt (or dairy-free alternative)
  • ⅓ cup honey or maple syrup
  • ¼ cup coconut oil (melted)
  • 1 tsp vanilla extract
  • ½ cup mashed banana or unsweetened applesauce
  • ½ cup almond milk (or milk of choice)
  • ½ cup chopped nuts, seeds, or dark chocolate chips (optional)

Directions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.
  2. In a large bowl, whisk together almond flour, Hemp Farm Protein Powder, oats, baking powder, baking soda, cinnamon, and salt.
  3. In another medium bowl, whisk eggs, Greek yogurt, honey (or maple syrup), melted coconut oil, vanilla extract, and mashed banana (or applesauce) until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, stirring gently. Slowly mix in almond milk until a thick batter forms.
  5. Fold in nuts, seeds, or dark chocolate chips, if using.
  6. Divide the batter evenly among the 12 muffin cups.
  7. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean
  8. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
