Minty Tomato Salad with Hemp Seed Oil

A simple and refreshing summer salad with chopped cherry tomatoes, red onion, balsamic vinegar and hemp seed oil. The perfect barbecue side dish and a great way to use up all of your cherry tomatoes!

Ingredients

  • 2 cups Cherry Tomatoes
  • 1 Small Red Onion
  • 1 Handful of Fresh Chopped Mint Leaves
  • 1 tbsp Balsamic Vinegar
  • 1 tbsp Hemp Seed Oil (add extra as required)
  • 1 tbsp Hemp Hearts

Directions

  1. Halve the cherry tomatoes and place in a medium-sized bowl
  2. Chop the red onion in half, and then chop each half into very fine slices.
  3. Chop the fresh mint finely
  4. Add the balsamic vinegar and the the hemp seed oil
  5. Season with salt and pepper
  6. Mix well to combine
  7. Chill for 1/2 hour in the fridge
  8. Sprinkle with hemp hearts just prior to serving
