These tasty little banana & oat breakfast baskets are healthy and versatile! Keep them simple and low sugar for breakfast with your favourite yoghurt and fruit, or zhoosh them up for dessert with some extra chocolate. Either way they’re DELISH!
*This recipe will make 9 baskets
Ingredients
- 2 ripe mashed bananas
- 1 cup rolled oats
- ½ cup hemp hearts
- 1 tbsp melted coconut oil
- 1 tbsp maple syrup
- 1 tsp cinnamon
- ½ tsp vanilla essence
- ⅓ cup raisins
- 1 pinch salt
Directions
- Preheat oven to 180C
- Mash the bananas, add coconut oil, maple syrup, vanilla essence, cinnamon, salt and mix well.
- Stir in the oats, hemp hearts and raisins
- Using a tablespoon fill in a muffin cup then press down with a spoon or your fingers to make a basket shape.
- Bake for approx 15 minutes.
- Let cool and fill in with your favourite yoghurt, then decorate with toppings of choice.
- *Refrigerate plain baskets for up to 5 days and have them throughout the week… filling them with your favourite toppings each day.
