Whether you've run out of bread or you love to create from scratch using wholefood ingredients we think you'll love this quick and delicious muffin recipe. It's best made in a large ramekin and sliced through the middle for 2 muffin-sized rounds, but can also be made in a mug and sliced into smaller servings.
This is the basic recipe, which is perfect for topping with a poached egg, an avocado or your favourite spreads. If you want to get fancy you can add sweeteners, spices, nuts, raisins etc.
Ingredients
- 2 tbsp Almond Meal/Flour
- 1 tbsp Hemp Hearts
- 1 tbsp Flaxseed meal / LSA
- 1 Egg
- 1 tsp Butter (or oil of your choice, e.g. coconut oil, rice bran oil)
- ½ tsp Baking Powder
- 1 pinch Salt
Directions
- Combine the almond meal, hemp hearts, flax meal, baking powder and salt in a large ramekin or coffee mug.
- Mix in your egg and fat/oil/butter.
- Microwave on high for 60 - 90 seconds depending on the power of your microwave. A bit longer if you've added lots of other ingredients, like cheeses, nuts, frozen berries, etc.
- Can also be baked in the oven of course but then... it will be a bit longer than a minute
