Ingredients
- ½ cup hemp seeds
- ½ cup sesame seeds
- ½ cup desiccated coconut
- ½ cup sunflower seeds
- ½ cup tahini (can use peanut butter instead)
- 2 cups dates
- ¾ tsp salt
Directions
- Add the seeds and coconut to a food processor and pulse a few times to combine.
- Add the dates, peanut butter, and sea salt and process until it resembles a crumbly dough.
- Line a square baking pan and press the dough firmly into the pan. It’s worth taking your time to do this step properly. Using the back of a large spoon helps.
- Place the pan in the freezer for 3 hours to firm up.
- Lift the bars out of the pan and cut them into bars or squares.
- Bars do not freeze solid and are best served straight from the freezer.
- The recipe can be doubled to fit into a large rectangular pan.
- The recipe can be made into balls instead of slices if preferred.
